A year ago we bought three bags of this coffee and spent the next twelve months regretting the number three.

The honey-process lot from Finca La Ladera sold out in nine days last August. This year we committed early and bought everything the farm could give us, which still is not much: thirty cases landed at the roastery on Tuesday, and the first roast comes off the drum this week.

If you missed it last year, honey processing means the fruit is left on the bean while it dries. In this lot that shows up as dried fig sweetness up front, a clean cane-sugar middle, and a cocoa finish that hangs around well after the cup is empty. We roast it medium light so none of that gets buried.
